At last - Spring Gin is here!!  We are delighted to offer the latest innovative Foraged Gin from The Glendalough Distillery, Ireland’s first craft distillery.

"Wild Spring Botanical’ recently launched at Bourne & Hollingsworth Buildings and is an outstanding new addition to the range using fresh botanicals foraged locally in the picturesque Glendalough countryside.

Glendalough Spring gin is produced with the guidance of local forager & botanist Geraldine Kavanagh.  Geraldine and her team spend up to a week collecting the available botanicals from the Wicklow country side which surrounds the Glendalough distillery.

Spring 2016 will feature foraged botanicals including:
Gorse Flower, Sweet Woodruff, Wood Sorrel, Beech Leaves, Watermint, Blackberry Leaves, Dandelion Flower, Sweet Cicely, Blackcurrant Leaves, Birch Sap, and Scots Pine. These foraged botanicals are then distilled with six basic ingredients of gin — juniper, coriander, angelica root, orange peel, bitter almond and orris root.

The resultant gin is fruity on the nose with a floral perfume, grassy notes and pine. The taste is big with a full mouth feel and notes of juniper, gorseflower, a little citrus and sweet, fresh pine. The finish is warming, with citrus.
